I was asked in an interview of Liberty Mutual of this question. What would you say if you were me?
My answer would be:
I believe in insurance and it makes sense for me to be an actuary to make estimates about future events.

That would assume we know who you are. No one knows who you are, so if we were in fact you, we'd have probably answered exactly as you did.
I think the question you meant to ask was, "if you were asked this question, how would you respond?"
My answer: "Insurance claims are largely uncertain; we may know that claims will occur and the amounts that they might be on average, but those assumptions don't hold from year-to-year; claim frequency may increase or decrease, claim severity may increase or decrease. The main challenge IMO is figuring out how frequency and severity will change going forward, given past experience and current conditions. Making that forecast involves uncertainty that is answered with science, art, and a little bit of gut feeling. It's a set of circumstances that are in flux, and may change quickly - and it's a scenario I feel I'm comfortable working in knowing that what I thought was right last quarter or even last month may be incorrect and work needed to adjust those prior guesses."
