Say I was asked a question similar to: Tell me about a time when you had to deal with incomplete information and how did you deal with it?
(The Answer needs to be in terms of missing DATA, excel data, lets say. Give me a best situation based answer, please!)

FSA is right, you can't ask how others would deal with it because then your employer would think that's how you'd work with it. However from a statistical perspective I would wager there is a lot of research done on how to work with incomplete data i.e. censored or truncated data. Those methods are only a part of an answer your employer might expect from you.
